Air fryer halloumi fries recipe so good it should ‘be illegal’

Renowned British chef Sam Stern has delighted his food-loving followers with a simple and scrumptious recipe for halloumi fries, which can be easily prepared using an air fryer, currently a top kitchen gadget for many households.

Stern, famous for his 2005 cookbook ‘Cooking Up A Storm – The Teen Survival Cookbook’, has been offering a variety of recipes online which can be conveniently put together in any home kitchen.

In a 2023 Instagram session, Sam shared a mesmerising step-by-step of making mouth-watering halloumi fries served with a tangy greek yoghurt dip in his series ‘Cheese Chronicles’. His post read: “Proudly launching the Cheese Chronicles with my first delicacy: Air Fried Halloumi Fries. This series will explore and share with you a wide range of scrumptious dishes centered around cheese. If you have any cheese dishes in mind you’d love to see, feel free to drop a comment below. Dig into these flavour-packed halloumi fries served with a zesty lime herbed yoghurt, tempting toppings, and a divine drizzle of honey.”

Stern’s halloumi fries recipe instantly won the hearts of his followers, with one fan named Taylor praising, “Halloumi is always the way to go!”

Lucy chimed in, “This should be illegal.” Megan enthused, “These look incredible.” I_stayfit joined in, “Now we’re talking! Looking forward to more cheesy delights, Sam.”

The winner of MasterChef 2012, Shelina Permaloo, also showered the dish with praises, “These look fantastic.” An equally ecstatic Somebodyfeedkaz added, “Absolutely beautiful sight for my eyes.”

Sam Stern’s Air Fryer Halloumi Fries Recipe

Ingredients

For the sauce:

  • 75ml greek yoghurt
  • Small bunch of finely chopped parsley or mint
  • Juice of half a lime

For the fries:

  • 400g block of halloumi
  • 100g plain flour
  • 1 tsp each of garlic granules, onion granules, oregano, chipotle chilli flakes, and smoked paprika
  • Black pepper to taste
  • 1-2 eggs, whisked well
  • 100-150g panko breadcrumbs

For the toppings:

  • Freshly diced chilli
  • Chopped mint or parsley
  • Pomegranate arils
  • A drizzle of honey

Preparation Instructions

Start by making the sauce. Mix yoghurt, herbs, and lime juice in a bowl and set it aside.

Next, slice the halloumi into 1cm thick slices. Then, further cut them into three equal chip-sized pieces.

Combine all the powdered spices and flour. Coat the halloumi slices thoroughly in this mix, followed by a quick dip in the eggs and finally a roll in the breadcrumbs.

Preheat an oiled air fryer to 185°C. Arrange the halloumi slices on the tray in a single layer, ensuring they don’t overlap.

Spray on a bit more oil and cook for about eight minutes, periodically flipping them and adding some more oil for added crispiness.

Once done, plate the fries, layer it with the prepared yoghurt sauce, fresh chilli, herbs, pomegranate, and finish it off with a glazing of honey. Serve hot and enjoy!
